Zucchini Wedges
1-2 green and/or yellow squash
Extra Virgin Olive Oil
Sea Salt
Fresh Cracked Pepper
Italian Seasoning blend

1. Set oven to low Broil
2. Cut zucchini into small wedges by cuttiing into 3 sections then cutting each section lengthwise
3. Place on baking sheet
4. Drizzle or brush wedges with small amount of Extra Virgin olive oil
5. Shake on small amount of sea salt, fresh cracked pepper, and italian seasoning
6. Broil on bottom rack of oven for 20-30 min turning once halfway.  Cooking times may vary depending on oven and wedge size.  Watch closely through cooking duration.

Chocolate Banana Avocado Pudding
1 ripe bananas
1 ripe avocado
1-2 TBS. cocoa

Combine ingredients and blend to experience a healthy pudding alternative

  1. One Ingredient Healthy Ice Cream

    That mystery ingredient, of course, is banana! The smidgen of fat in bananas makes a magic trick when they are frozen and blended up. They turn creamy instead of crumbly, with a smooth texture.

    • Cut them into small pieces. (Best if slightly over ripe)
    • Freeze for just 1-2 hours on a plate.
    • Blend, blend, blend – scraping down the bowl when they stick.
    • Enjoy the magic moment when they turn into ice cream!
